Torrontés is aromatic in a way that suggests sweetness and then finishes dry, and the version grown here at around seventeen hundred metres is the one the grape is known for. The altitude is not a detail: the sun is fierce, the nights are cold and the swing between them is what puts the aromatics in the glass.
It is the surprise of any tasting here: floral and grapey on the nose and then clean and dry in the mouth. People who think they do not like white wine tend to change their minds in Cafayate, which is most of why the town exists on the tourist map.
Start with this one
The vineyards sit far higher than Mendoza and the ultraviolet at that height thickens the skins, which is where the colour and the aromatics come from. The reds, mostly Malbec and Tannat, are correspondingly dense.
Why it tastes like that
Most are within a short drive of the plaza and several are walkable, which makes an afternoon here far easier than in Mendoza. Bookings are still worth making for the smaller ones, especially in the harvest weeks around February and March.
