Three hours south of Salta on Ruta 68, through the Quebrada de las Conchas, past red rock formations with names like the Amphitheatre and the Devil s Throat. The town at the end is small, pleasant and full of wine. But almost everybody who comes back talks about the drive first.
The gorge is a sequence of formations you get out of the vehicle for, one after another, and the light changes all of them through the day. Doing it in both directions on the same day means seeing it twice in different light, which is an argument for the day trip.
Stop at all of them
Cafayate is a few blocks around a plaza with bodegas walking distance from it. There is not a great deal to do beyond eat, taste and sit, which after a day on the road is precisely the appeal.
Two nights is plenty
North from Cafayate the Ruta 40 runs up through Molinos and Cachi on gravel, which turns the return into a loop rather than a there and back. It needs a day of its own and it is the best driving in the northwest.

Summer rain can cut the gravel roads towards Cafayate or Iruya for a few hours.
