Most people give the city two or three nights on the way to somewhere else, and that is enough for the landmarks. Seven days is a different proposition: it is the length at which the delta, the pampas and the crossing to Uruguay all fit, and at which you stop sightseeing and start living there for a while.
San Telmo, Recoleta, La Boca and Palermo come to about three working days. Everything after that is the province and the river, which is where a week gets interesting rather than repetitive.
Three days, then out
An hour by fast ferry puts you in Uruguay, in a colonial town that is quiet in exactly the way Buenos Aires is not. It is the easiest border crossing in South America and it makes the week feel much longer.
One ferry, one passport
An estancia within two hours of the city gives you the horses, the asado and the flat horizon that the country is built on. It is the single day out that most changes what people think Argentina is.
